Quick + Creamy Beef Pasta

20 mins - it’s quick, savory, and perfect for a winter night ❄️

Ingredients

  • ¼ cup olive oil

  • 1 sweet onion, chopped

  • 2 carrots, chopped

  • 1 shallot, chopped

  • 3 cloves of garlic, minced

  • 1 lb ground beef

  • 1 zucchini, cut into ½ inch pieces

  • 3 tbsp tomato paste

  • ½ cup of heavy cream

  • Splash of red wine

  • 1 jar of your favorite red sauce

  • 1 cup of parmesan, grated

  • Handful of fresh basil, chopped

  • 1 box of bucatini or your choice of pasta

  • Salt + pepper

  • Italian Seasoning

Instructions

  1. In a large pot, heat olive oil over medium, and add onion, shallot, carrots, and celery. Cook for 10-15 mins until tender and darken around edges.

  2. Next, add the ground beef. Cook until the meat has browned. Halfway through cooking, add spices + salt & pepper.

  3. Then add tomato paste and mix. Cook for an additional 3-5 mins.

  4. Add the zucchini, tomato sauce, splash of wine, and parmesan. Stir & scrap any brown bits off the bottom of the pot. Bring to a simmer.

  5. Cook bucatini until al dente, while reserving ½ cup of the pasta water. 

  6. Then add the pasta and the reserved water to the meat sauce and mix together while keeping the pot on low heat. 

  7. Once the sauce and pasta are incorporated.  Serve immediately, drizzle with olive oil and freshly grated parmesan.
