Marinated Beans

These are my go-to “oh my god, we’re headed to a dinner party, and I have nothing to bring” appetizer and snack! They are great served with crackers, warm bread, cheeses, and veggies.

Ingredients


2 cans of butter beans, drained and rinsed
⅓ cup olive oil
¼ cup of red wine vinegar or white wine vinegar
2 garlic cloves, grated
Juice of 1 lemon

Directions


1. Heat the olive oil in a small pot over medium heat. Add the beans and garlic and season with salt and pepper.
2. Cook for a few minutes. We’re only trying to warm the beans.
3. Remove from the heat and add the vinegar and lemon juice swirling to combine. Let sit for 30 minutes to marinate.
4. Transfer the bean mixture to a small bowl or serving dish and finish with more black pepper and lemon zest.
