Sizzling Scallion + Pepper Whipped Feta Dip

Ingredients

Whipped Feta
8 oz. Feta cheese
1/4 cup olive oil
1/2 cup any milk (I use half n half cuz it’s always in my fridge)
2 tbsp honey
1/4 cup cream cheese
Black pepper

Sizzling Shallot Oil
1 small shallot, diced
1/4 cup basil, chopped
2 tbsp pine nuts, chopped
2 tbsp chili flakes (I go heavier for more kick)
2 garlic cloves, chopped or grated
1/2 cup olive oil

Roasted Tomatoes
2 cups cherry tomatoes (I prefer the multicolor)
6 mini bell peppers, thinly sliced
1/4 cup olive oil
Salt & pepper
1 garlic clove, grated

Directions
1. In a nonstick skillet over medium heat add the olive oil. Once warm, add the cherry tomatoes, and sliced mini peppers. Let roast until you get some color and then add the garlic. Cook for a few more minutes and season with salt and pepper.
2. Combine all whipped feta ingredients in a food processor or blender. Mix until smooth. Add to a flat serving bowl.
3. Combine all ingredients for sizzling shallot oil in a heat-safe bowl or pyrex. Heat oil in the same skillet you used for the tomatoes. Once it’s heated - the oil should be shimmering; pour oil over the combined ingredients in the pyrex.
4. Add the tomatoes on top of whipped feta dip followed by sizzling shallot oil. Top with black pepper and a few crushed prune nuts. Serve with a roasted baguette and a cold glass of wine.
